A New Way of Cooking Salmon
A new way of cooking salmon πππ
Skillet roasted in the oven with lemon slices π , onions π§ , chile pepper πΆ, garlic π§ . This recipe is bursting with flavor and a nice kick of spice from the pepper. Itβs also super easy and the oven does the work for you, no stirring or flipping needed! You can follow the directions below step by step for optimal flavor or you can always throw everything in the pan at once and place in oven. Iβve made with and without fennel, delicious either way. Ingredients:
2 6-8oz salmon filets
2-3 lemons, thinly sliced
1 small fennel bulb, thinly sliced
1 large onion, thinly sliced
1 chile pepper or chile paste
2 garlic cloves, thinly sliced
1/2 cup extra virgin olive oil
1.5 tsp salt and pepper
fresh herbs: parsley, dill, chives
Method:
Preheat oven to 275F.
Thinly slice the lemons, chile and garlic.
Whisk together the garlic and chile with the olive oil.
Season salmon salt and pepper on both sides.
Place lemons, onion, fennel and half the oil, pepper, and garlic mixture into a cast iron skillet or oven-safe skillet.
Place salmon on top of vegetables and top with remaining oil mixture.
Place in the oven until the fish is cooked and slightly pink in center ~30-40 mins (Optional: check half way and spoon some of the liquid over top the dish).
Remove the fish, transfer to plate
Caramelize the lemon, garlic, onion, etc. leftover in the pan on the stove then pour over salmon.
