Fish en papillote
A friend who is a chef recently came over and cooked fish en papillote (in parchment) on the grill. It was a hit and I immediately tried it myself the next night. I’ve cooked fish en papillote in the oven but never on the grill. Since it’s summer, we’ve been utilizing the grill a lot more.
Cooking fish in parchment is an easy way to give the fish a lot of flavor without hours or marinating. You place the fish in the parchment and season it just before cooking.
The fun part of this recipe is that you can season the fish however you like and really explore different flavors.
Method:
Place fish in parchment.:
Slice diagonal, shallow cuts into the fish.
Place fresh garlic and rosemary inside.*
Sprinkle salt and generous amounts of ground pepper and extra virgin olive oil over the fish.
Wrap the parchment around the fish.
*Instead of garlic and rosemary, you can get creative and incorporate your favorite flavors and spices.
Here are some other flavors I use:
Fresh lime juice and ginger
Generous sprinkle of dried Herbs de Provence.
Cooking Method:
Grill option: wrap the parchment in foil and grill directly. Set over high heat until you hear the oil bubbling. Turn one burner off and one burner to medium-low. Place fish over the off-burner (indirect heat). Cook ~ 15 minutes, depending on size and thickness of filet. Unwrap and check fish after ~10 minutes.
Oven option: place parchment directly in oven preheated to 350F. Cook for ~ 15 minutes but again will depend on size and thickness or filet so just unwrap and check the fish after 10 minutes.
