Easy Lemon Chicken

This baked lemon chicken πŸ‹ πŸ“ is super easy to make and requires little time to prepare. It’s great to slice on salads or to serve with mixed veggies.

Ingredients:

  • 3 chicken breast or 4-5 chicken thighs

  • 4 lemons (more if chicken pieces are larger)

  • Olive Oil

  • salt and pepper

Method:

  1. Place chicken in a baking pan.

  2. Make a marinade of lemon juice from 2 lemons, enough olive oil to coat the chicken, 1/2-1 tsp salt and pepper to taste.

  3. Thinly slice the remaining two lemons and place on top of the chicken.

  4. Marinade in fridge for at least an hour.

  5. Bake at 350F until cooked through.

  6. Enjoy! I like to serve over a bed of arugula or spinach or with a mix of quinoa, zucchini, tomato, and peppers.
