Turmeric-Lime Chicken

I have been on a turmeric kick lately in an effort to use more spices in my cooking. I created this turmeric-lime chicken marinade the other week and cannot get enough of it. It takes five minutes and produces a flavor that is juicy, zesty and refreshing.

Turmeric has been used in cuisines around the world for centuries due to the powerful properties of turmeric’s main active compound, Curcumin. Curcumin has anti-inflammatory, anti-viral, antioxidant, and immune supporting properties. It has shown benefit for cancer patients and those suffering from arthritis and joint pain.

There are many fun ways to add turmeric into your diet. You can make a golden milk latte, add it to eggs, any veggie dish, stir fry, pasta sauce, etc. The possibilities are endless. The combination of lime and turmeric in this recipe keeps the flavor really refreshing, which is important right now in the heat of summer!

Ingredients:

  • 1 package of boneless chicken (~ 4-6 thighs, 2 breast, or 6 tenderloins)

  • 1 lime, juice

  • Zest of 1 lime

  • 2 tsp turmeric

  • 1 tsp fresh cracked pepper

  • Extra virgin olive oil

  • 1-2 tsp salt

  • 1/4 tsp cayenne (optional)

Method:

  1. Place the chicken in a bowl.

  2. Pour a generous amount of olive oil over it ~ 1/3 cup or enough to coat each piece of chicken.

  3. Sprinkle a generous amount of salt ~1-2 tsp. Use a spatula or wooden spoon to mix the chicken around in the salt and oil.

  4. Add the turmeric, pepper, lime juice, lime zest and optional cayenne. Mix around until well combined.

  5. Let marinade in fridge for at least 15 minutes or overnight.

  6. Place the chicken directly onto the grill until cooked through.

  7. Enjoy!
